A good producer and easy to grow. The head consists of numerous white curds which are compact and almost solid. Strictly speaking an early variety, but experience has shown it can be grown very early in the spring in a shady spot in the garden if care is taken to keep it consistently cool.

The taste and texture are similar to those of a broccoli stem or cabbage heart, but milder and sweeter. The young stem in particular can be as crisp and juicy as an apple, although much less sweet. Harvest when still small before they go woody (between 6-9cm). A purple variety.

Also known as the Roman Cauliflower. Its colour is documented as 'chartreuse' (quite a mouthful, very posh indeed). It was first documented in Italy in the 16th centuary. Honestly it is mesmerising to look at. The spirals on the head are a marvel of nature. The flesh is wonderfully firm and it is a real taste sensation.
